Dinner!

I got some yellow squash at Trader Joe's this weekend. I sliced it up and cooked it in oil, garlic, salt, lemon & lemon pepper. It was just about done and I didn't really feel like cooking up pasta or anything, so I added a couple of scoops of spinach. I let the spinach cook down a little and then mixed it together and then topped it all with parmesan. Totally made the whole dish up... delicious!

The weather is confused.

Yesterday it was 102 and today I woke up to drizzle! It rained early this morning and is still overcast, but it's going to be 90 today! Oh, now it is raining again! So weird. I hope it doesn't rain for the concert tonight... Blink 182, Weezer & Taking Back Sunday!!!! But I do love rain. Winter is my favorite!!!

Corn Chipotle Bisque!

I bought a carton of soup the other day at Safeway-- because it sounded good, but also because I am anxious for winter so I feel like if I start stocking my shelves with soups and hot chocolate ... winter will be here soon enough!! It was tasty, but even better when I added salt, cayenne & mozzarella. YUM!

Asparagus and Mac & Cheese!

I made the best dinner last night! I made asparagus... in the oven with garlic-basil oil and parmesan... and mac and cheese.... homemade with cayenne, mozzarella, cheddar... and then broiled with breadcrumbs and parmesan on top. It was delicious!!! I am quite proud of ME :)
