Photoshop Addict.

I spent most of today making new buttons/header/signature/colors/etc. on my blog. Lazy Sunday at its best! Once I start playing on Photoshop, I can't stop.

Gnocchi a la Lindsay

Boil gnocchi for 3-4 minutes

Sauce:
8 oz tomato sauce
2 tbsp olive oil
1 garlic clove
**oregano
**thyme
**lemon pepper
**cayenne
**onion powder
Cook chopped garlic in oil for a couple minutes. Add the rest of the ingredients, stir. Heat for another 2-3 minutes to let the flavors blend. Mix in gnocchi. YUM.

** No measurements for dry herbs/spices because I make up my recipes as I go. Usually 1-2 dashes depending on what kind of mood I'm in :) This time I was in a lemon pepper craze so I added about 4 grinds.

The Pregnancy Pact

I watched the Lifetime premiere of The Pregnancy Pact this past weekend. I had no idea this movie was based on a true story. {Read Time article here} It was really sad to think that something like this actually happened. Just goes to show how important sexual education is in schools...

Enchiladassssss

I've been craving enchiladas for about a week now. Instead of going to order some veggie enchiladas at my favorite Mexican restaurant, I decided to make them. I bought the seasoning for the sauce and Fantastic Foods fake taco meat. I made the "meat" and then mixed in black beans, rice and corn. I started rolling them with corn tortillas, but had a hard time trying to get them not to break! Switched to flour. Filled each one with the meat mixture and topped it with soy cheese and a little sauce. I love making food that doubles as dinner and work lunches! Super easy too. Everything took about 25 minutes.

Wiki-what?


I have always loved Wikipedia! Wiktionary is always helpful, same with Wikiquote... and Wikihow... and now I have discovered Wikibooks! It is awesome. They even have a cookbook section. Guess I'll have to try some of the vegan recipes :) I really want to make chili! mmm...

Curry.

I read a few recipes and took a little bit of each to make some spicy red curry with baked tofu, broccoli and brown rice. I had enough to eat it all week. ha.

Today, I made a pizza.

Wheat pizza dough, pesto, spinach & goat cheese. Takes about 8 min to cook.

After I cooked it the spinach really shrunk, so I added more and threw in back in the oven for a couple minutes.

Back from the East!

Just got back from NY/Boston... where I spent Christmas and New Years... it was amazing. SO much fun! AND I saw it snow for the first time ever! Awesome!
