Yesterday I woke up craving eggs. I don't normally eat eggs, but I really wanted to eat my zucchini and for some reason I wanted it with eggs! I chopped up the zucchini into slivers and right before the eggs were done cooking I added the zuccs.

I cooked it for about 2 minutes, added some salt and then put a handful of mozzarella on top. I let it all cook until the cheese melted. It was soooo good. I'm pleased with my experiment!

After the egg-zucchini-mozzarella scramble, I heated up some cheddar-jalapeno bread that I got at safeway. It was a very successful dinner!

ReplyDeleteI never would have thought to put the zucchini in with the eggs, but that looks really good. I may have to try this...
