It turned out really good and everyone seemed to like it. The only problem is I have so much left over I think I'm going to be eating pasta salad all weekend! OH WELL!!! It will be nice since we're going to have record topping temperatures in the 100's this weekend!

We had a potluck lunch at work on Friday for my boss's birthday. It was a mini surprise party and we all made something to bring. I have this secret [made up] pasta recipe that I wanted to make, but it isn't that good reheated, so I made it into a pasta salad! I added 1/2 a red onion, 1 cucumber, 1 red pepper and 2 cans of olives to the pasta I normally make with my special sauce.
I was going to chop up the whole onion but my eyes were tearing so bad that I couldn't! Of course, it wouldn't be my special pasta dish unless it was covered in feta...

It's that time of year....
All week I have been watching season finales... it's so sad!! I hate that all of the shows end at the same time, but at least I will have a ton of free time to catch up on my reading and my Netflix queue! However, there is one thing I absolutely LOVE about all of the nightly shows ending:


BIG BROTHER STARTS SOON!!!!!!
Season 11 of Big Brother starts in the beginning of July and I am SOOOO excited! I was bummed they didn't have a winter season this year. During the writers' strike, CBS was smart enough to throw in an extra season of house guests and Julie Chen. It was amazing having two seasons in one year. Especially because the show airs 3 times a week, has live feeds on Showtime every night from 9pm-12am, and has crazy, devoted fans who update blogs about everything the house guests do 24 hours a day- 7 days a week. Big Brother is ALWAYS watching! I cannot wait to find out what the twist is going to be. There will definitely be some BB viewing parties now that I got enough of my friends addicted to the show! You're welcome.

Brewfest continued... River City Brewery
Sooo two of my friends got brie cheese quesadillas and they were amazing! One had chicken in it, which I didn't eat, but I tried some of the regular one and it was so good.
More chicken I didn't eat, but this caesar looks delicious. They also have bread and of course it is fantastic too. We ordered balsamic/olive oil dipping sauce which made it even better.
THIS was mine. Eggplant with pesto, goat cheese, and sun dried tomato tapenade.

We love the rodeo dances!
Pistol Pete's in Auburn had a dance after the rodeo on Saturday and a bunch of us went. It was much different from the week before, but still pretty fun. We got a kick out of the choice of beverages they had.... 24oz Coors Light can or a 12oz Coors Light in a plastic screw top bottle! hahaha. They had a full bar, but almost everyone was drinking beer so we tried to fit in (as much as we could)!

Summer is around the corner...
So my friends had a BBQ last night and it was a lot of fun. They got a TON of food at Nugget and it was amazing! Salad, Greek salad, kabobs, garlic bread, chips and guacumole, chicken, twice baked potatoes... and probably some things I forgot!
They got 3 pieces of chicken that were each marinated in a different flavor and one chicken cordon bleu.
I have never had that, but it looked SO good!!! Chicken in bread crumbs stuffed with ham and cheese ?! WOW. They also bought veggie burgers for me since I don't eat meat. They were Amy's cheddar burgers and very tasty. I put havarti and homemade guac on it. Even the bun was great!
There was so much food! I even got a doggie bag to take some home and I ate another one for dinner tonight and tomorrow I am bringing my twice baked potato to work. Hahaha.
It got chilly around 8pm so the boys built a fire.
Can't wait for our next BBQ!

Earth Day!!!!!

Today, I ate lunch outside while I was trying to tan. I can't believe it's 90 degrees in APRIL! There isn't really much around our building besides the parking lot, but I found a little grassy area and had a PB & honey sandwich and pineapple. I've been going out in the sun every day at lunch trying to soak up the rays. I think it's working. Everyone laughs at me. "Who tans in the parking lot at lunch!?" Really pale people.

Such a gorgeous weekend! Sunday we went to BRUNCH and had amazing food @ Waffle Barn. It was delicious. They have pictures on every table of happy cows and chickens and pigs with little random facts... it was a little weird. Not that I eat meat, but if I did I don't think I would order bacon or anything with a group of pigs staring at me from their lovely field of grass.
Grilled cheese with avocado and country potatoes.... yum!
Oh, and I'm a covergirl like Ellen.

We went to PENRYN to the Valencia Club for the Rodeo Dance...... and OH MY GOSH it was so much fun!!

We were so excited, but not really sure what to expect. There was such a huge age range, but all enjoyed dancing to the Dave Russell Band. They were awesome.
