Eggplant

You may remember a few weeks back when I posted a picture of my AMAZING dinner at River City Brewing.  I finally got a chance to *try* to re-create it!  I bought these frozen, breaded eggplant patties a couple months ago from Trader Joe's and they ended up being perfect for this dish!
I cooked two of the eggplant slices and spread some goat cheese on top.
Next, I covered the goat cheese in pesto!  Goat cheese & pesto are really good together!
Finally, I poured tomato-basil marinara over the whole thing.  At the restaurant they used sun-dried tomato tapenade, but I had the pasta sauce and it was still pretty tasty.
Oh, if you know anything about me then you know I LOVE cheese, so I covered the entire thing with parmesan!  It was definitely a success.  I wish I had shredded parmesan because that would have been better, but Kraft worked well!

  3. LOOKS GREAT. i've tried those egglants from tjs but wasn't a huge fan. i'll have to try them again this way!
