More eggplant!

Last night I dug through my kitchen to find some dinner. {NEED to go food shopping!} I always have a stash of frozen breaded eggplant slices so I thought I'd make my regular meal with goat cheese. I took it out and it was moldy! I was bummed, but then realized I also had ricotta and thought that would be good. Nope. Mold! All my cheese was gross! I resorted to my large [handy] container of feta. I fried up the eggplant {by fried, I mean heated up in a pan without oil because I'm out of that too!} and topped it with feta and pesto, then covered it with marinara. It was really good! Feta to the rescue!
