I think I had Chipotle three times this week... I have decided that when Lent starts I am going to give up my burrito bowl {aka Chipotle} addiction! It's 46 days... oh dear....

Incredible.

Words cannot describe how amazing the last performance of RENT was. Full theatre, awesome goodbye speech by Anthony, show was dedicated to Jonathan Larson's parents {who were there}, whole cast & crew onstage and then we all clapped along and sang the last song together. Never been to a better show!!! I'll miss you RENT!

SUPER Sunday

Not only will I be enjoying the Super Bowl {aka funny commercials and yummy snacks, football=blah} but after the game we are going to see RENT! This will be my second time seeing the show AND it is staring Adam Pascal and Anthony Rapp again! Hooray!

Goo Goo for Gaga

Not surprising, Lady G knocked it out of the park at the Grammy's last night! I didn't think I could love her any more than I already do, but WOW I was impressed! She sang Speechless with Elton John and they were both incredible. Here is a link to the vid: Huffington Post

I really enjoyed the whole show. Pink had an awesome performance...and of course Taylor Swift singing with Stevie Nicks! I was super happy to see Bon Jovi bring out Jennifer Nettles for Who Says You Can't Go Home.... LOVE that song!

I'd have to say that Dave Matthews Band comes in at a close second for my favorite performances of the night. Mostly because I am/have been/always will be a HUGE DMB fan. Their music makes me so happy.

Photoshop Addict.

I spent most of today making new buttons/header/signature/colors/etc. on my blog. Lazy Sunday at its best! Once I start playing on Photoshop, I can't stop.

Gnocchi a la Lindsay

Boil gnocchi for 3-4 minutes

Sauce:

8 oz tomato sauce

2 tbsp olive oil

1 garlic clove

**oregano

**thyme

**lemon pepper

**cayenne

**onion powder

Cook chopped garlic in oil for a couple minutes. Add the rest of the ingredients, stir. Heat for another 2-3 minutes to let the flavors blend. Mix in gnocchi. YUM.

** No measurements for dry herbs/spices because I make up my recipes as I go. Usually 1-2 dashes depending on what kind of mood I'm in :) This time I was in a lemon pepper craze so I added about 4 grinds.

The Pregnancy Pact

I watched the Lifetime premiere of The Pregnancy Pact this past weekend. I had no idea this movie was based on a true story. {Read Time article here} It was really sad to think that something like this actually happened. Just goes to show how important sexual education is in schools...

Enchiladassssss

I've been craving enchiladas for about a week now. Instead of going to order some veggie enchiladas at my favorite Mexican restaurant, I decided to make them. I bought the seasoning for the sauce and Fantastic Foods fake taco meat. I made the "meat" and then mixed in black beans, rice and corn. I started rolling them with corn tortillas, but had a hard time trying to get them not to break! Switched to flour. Filled each one with the meat mixture and topped it with soy cheese and a little sauce. I love making food that doubles as dinner and work lunches! Super easy too. Everything took about 25 minutes.
