I went to Costco the other day and got a huge thing of brie and a couple baguettes. I really love cheese, but I think brie is my absolute favorite. In restaurants I have seen brie cheese quesadillas on the menu before, but I have never actually tried it. I decided that with my family sized chunk of cheese I should test it out. Success! It was soooo creamy and delicious. The only thing better than brie on bread/cracker/spoon, is when it's MELTED!
