I went to work a bit late on Tuesday so I could hit up the farmer's market at the the park on the corner. It was worth it! I have seen them setting up every Tuesday for a few months now and I have always wanted to stop, but never have. They have so much variety, I was impressed! I got eggplant, zucchini, tomatoes, and pluots. I also picked up some white & yellow peaches & nectarines for a co-worker. Everything was super tasty!
I was cooking up some of this for dinner the other night and managed to eat most of the tomato before I could get it to the pan! I love fresh foods!!
I cooked the eggplant and tomato with garlic {+ my garlic basil oil, I love me some garlic} then topped it with parmesan & mixed it all with spaghetti... Yum!
